A traditional dessert made with just three ingredients, almonds, sugar and egg whites, has remained part of the culinary heritage of Cizre, a historic district in Türkiye's southeastern province of Sirnak, where the delicacy known as Memilheva continues to be passed down through generations.

Recognized with a geographical indication registration in 2021, Memilheva holds a special place in local celebrations and hospitality traditions, particularly during religious holidays, weddings and family gatherings.

The dessert is also traditionally included among gifts sent from the bride's family to the groom's household and served at tables prepared for newly married women.

Its geographical indication, a form of recognition linking a product to its place of origin and traditional characteristics, has also contributed to growing interest in Memilheva among domestic and international visitors exploring Cizre's culinary culture.

Three ingredients preserve a centuries-old recipe

Ercan Yildizaydin, who has been producing Memilheva since 2019, said the dessert represents a culinary tradition rooted in Cizre's long history in Mesopotamia.

According to Yildizaydin, the recipe has been handed down within families for generations, with mothers teaching their daughters the same preparation methods they learned from their own mothers.

Although he described the dessert as having a history stretching back thousands of years, Yildizaydin acknowledged that its exact origins remain unknown.

He explained that the traditional preparation uses only almonds, sugar and egg whites, without adding preservatives or other additives to extend its shelf life.

Yildizaydin also drew attention to the dessert's distinctive pointed shape, explaining that its design allows heat to reach the interior more effectively during cooking, helping prevent the center from remaining undercooked.

While preservatives could make the product last longer, he said producers deliberately avoid them to maintain its traditional flavor.

From Cizre's wedding tables to international customers

Beyond its role in family celebrations, Memilheva has increasingly reached customers outside Cizre, with producers arranging deliveries across Türkiye and abroad.

Yildizaydin said his business offers the dessert in trays or packaged portions sold by weight, allowing customers to order it for weddings, circumcision celebrations, meetings and other special occasions.

He added that people originally from Cizre also order the dessert to introduce their hometown's culinary traditions to others around the world.

For Yildizaydin, preserving Memilheva means more than maintaining a recipe, as the dessert remains closely connected to the district's cultural identity and customs.

"Keeping a flavor alive means touching not only the palate but also the soul of a community. Culture gains meaning as long as it is kept alive," he said, emphasizing his commitment to passing the tradition on to future generations.
