500 years of flavor: Gaziantep’s iconic katmer continues to enchant food lovers

For five centuries, katmer has been one of Gaziantep’s ultimate comfort foods. This officially protected, geographically registered pastry is loved by locals and travelers alike for its perfectly crisp layers, rich filling, and deep cultural roots.

Locally, the pastry is best known as the ultimate breakfast fuel, representing the local philosophy of "starting the day sweet." Historically, the delicacy was strictly a morning affair.

Katmer production used to begin at 6 a.m. and wrap up by 11 a.m Turkish local time; however, with the massive influx of tourists visiting Gaziantep, demand has shifted. Today, guests enjoy it as a dessert throughout the entire day, not just at the breakfast table.

'May our mouths be sweetened': Deep-rooted wedding tradition

Beyond being a daily treat, katmer holds a special place in local marriage customs. ''It is traditionally a bride and groom food," explains a local artisan who has been mastering the craft since 2000.

The morning after a wedding, it is customary for relatives to deliver katmer to the newlyweds and the bride's family. It symbolizes wishes for a sweet, harmonious, and abundant life together, a tradition that has endured for centuries.

Secret to perfect crunch: Paper-thin mastery

What sets this legendary pastry apart is the meticulous skill required to prepare it. Master bakers roll and spin the dough on countertops until it reaches a tissue-paper consistency. According to industry experts, a properly rolled dough must be translucent enough to let light pass through.

The dough is then layered with top-tier local clarified butter, fresh water buffalo clotted cream (kaymak), and geographically protected Antep pistachios before being baked in a traditional stone oven. The result is a perfect contrast of textures: a lightly crisp exterior paired with a melt-in-your-mouth, velvety center.

Because it relies entirely on premium ingredients like pure beet sugar and first-class milk cream, with its rich ingredients, the pastry is also widely regarded locally as an energy-boosting food. A single portion takes just three minutes to prep and three minutes to bake, meaning it can be served fresh to customers in under 10 minutes.
