A unique type of honey produced in the high-altitude regions of Mersin is gaining attention for its naturally white appearance, which has surprised many consumers.
The honey, produced through the seasonal migration of beekeepers from sea level to Egricayir Plateau at more than 2,000 meters above sea level in the Taurus Mountains, becomes white through a natural crystallization process.
While some consumers initially assume the white color is the result of additives or artificial processing, producers state that the transformation is a natural characteristic of pure flower honey.
The honey undergoes a controlled resting and mixing process for approximately 15 days, allowing it to develop a creamy texture and a white appearance similar to hazelnut spread.
Beekeepers in the region say the product is made entirely from natural flower honey and contains no additives or preservatives. Beekeeper Celal Cay explained that natural honey gradually crystallizes over time, causing its color and texture to change.
“This white honey is 100% flower honey. When real honey crystallizes, it naturally turns white. The honey produced in Egricayir Plateau is carefully crystallized under controlled conditions before being presented to consumers,” Cay said.
The product has also gained popularity among families, particularly because of its appeal to children.
Some consumers who tasted the honey for the first time said they were initially skeptical due to its unusual appearance but became convinced of its authenticity after learning about the natural production process.
Chemist Duru Cingoz stated that the honey passes necessary quality analyses before processing and that the whitening process is carried out without the use of any additional substances.
She noted that the honey maintains its natural nutritional properties throughout the process.
