20 tons a day: Gaziantep bakers race against time for Ramadan

As Ramadan Bayram approaches, the city of Gaziantep, renowned as Türkiye’s baklava capital, has witnessed a significant increase in baklava production. The traditional dessert, a central element of holiday celebrations, has seen rising demand both domestically and internationally, prompting local producers to intensify their operations.

Daily baklava production in the city has surpassed 20 tons, with many businesses implementing double-shift systems to meet the heightened demand. Bakers begin work in the early hours of the morning and continue throughout the day, ensuring continuous production to fulfill orders ahead of the festive period.

“Demand exceeds expectations”

At Omer Kozan Baklava, one of the city’s leading establishments, owner Omer Kozan speaks to Ihlas News Agency about the exceptional surge in orders this year. "Compared to previous years, the demand has significantly increased. To meet these requests, we have adopted a double-shift system, working day and night,” he stated.

Kozan also emphasized the growing international interest in Gaziantep baklava, noting that orders are now arriving from European countries in addition to domestic clients. “All baklava producers are fully mobilized, working tirelessly to meet deadlines,” he added.
